I made a round Lemon cake with Cream Cheese Icing yesterday. It is delicious. The cake itself is super moist. I would like to do scratch baking but I am holding out until I get my KitchenAid. Instead, I used a boxed Lemon Supreme cake. I actually had a package of cream cheese, but no confectioner's sugar. So the icing was also store bought. I warmed it up in the microwave for about 40 seconds and let it get real thin and then poured it on the warm cake so it would absorb it and leave a thin layer of icing on the top and sides of the cake. It is very delicious. It feels light but still satisfies the sweet tooth;I also think it fits the weather outside!
